En una ocasión tan especial como esta semana Santa, no podrás sustraerte a los sabores del mar, y por lo tanto te daré una receta más, en la que se incluye unos deliciosos filetes de pescado y unos espectaculares camarones, bañados con una salsa que te chuparas los dedos.

  1. 1 kg De camarón crudo U 15 pelados, sin cabeza y cola
  2. 1 Kg De filetes de pescado cortes de 15 por 5 Huachinango o el de la región carne blanca

  5. 10 ml. licor de naranja
  6. 1/2 tza. Caldo de pescado
  7. 1 tza. De cebolla blanca picada
  8. 1 pieza echalotte picado

  10. 1 rama perejil
  11. 50 grs. Mantequilla
  12. 20 ml. aceite de oliva ligero
  13. Al gusto Sal y pimienta

  1. En un sartén caliente, agregar la mantequilla, el aceite de oliva y posteriormente incluir la cebolla el echalotte y por último el ajo, dejar acitronar y reservar.
  2. En otro sartén caliente, a fuego medio, agregar la mantequilla y el aceite de oliva. Colocar los filetes de pescado para sellarlos y ya que estén dorados de ambas caras, incluir los camarones, saltearlos por 2 minutos y ya que estén listos, agregar, la cebolla, ajo y echalotte previamente acitronado, integrar todo.
  3. Posteriormente agregar el vino blanco, dejará evaporar el alcohol por 3 minutos más y por último agregar el jugo y el licor de naranja, dejar otros 5 minutos a fuego medio, condimentar con sal y pimienta al gusto, después apagar y reservar.
  4. Camarones ya listos.
  5. Emplatar. En un plato plano, colocar en el centro el filete de pescado y a su alrededor colocar 4 camarones, bañar con la salsa y colocar una hojas de perejil como decoración.
  6. Maridajeles recomiendo acompañar con una copa de vino blanco blanc de blancs frío.
