- 300 gr lomo de res

- 3 chiles chipotles
- 100 ml. leche Carnation clavel

- Cortar los nopales en forma de hoja de una rosa. (por hoja de nopal, salen aproximadamente 2 pedazos). Reservar.
- Barnizar los nopales y la rebanada de jamòn con aceite de olivo, y asar a la parrilla. Reservar.
- En la freidora meter la tortilla de maíz con ayuda de un cucharón para darle forma de canastilla. Reservar.
- Lavar y macerar la carne en una mezcla de ajo, aceite de olivo, salsa de soya, tomillo, laurel, comino, sal y pimienta, por 20 minutos en el refrigerador.
- Hornear la carne a 200ºC hasta que estè cocida, checar cada 15 minutos; ya cocida, cortar en tiras de 1 cm de grosor aproximadamente y de 5 a 6 cms de largo.
- Para el puré:
- Hervir las papas. Una vez hervidas, machacar e incorporar mantequilla y sazonar con sal.
- Freír el chorizo, una vez frito, incorporar al puré y mezclar. Reservar.
- Para la salsa:
- Licuar la mayonesa, el chipotle y la leche Carnation clavel.
- Verter en una bolsa, cerrarla y hacer un pequeño orificio en una esquina.
- Para la preparación:
- Hacer una decoración con la salsa en el plato, en forma de hilo.
- En el centro, colocar la rebanada de jamón.
- Sobre el jamón, colocar 5 nopales en forma de estrella.
- Rellenar la canastilla (tortilla de maíz) con el purè y colocar en el centro.
- Insertar 5 pedazos de carne en el puré de forma pentagonal.
- En el centro colocar una ramita de perejil como decoración.
- Meter al horno a 150ºC por 3 minutos y servir.
