  3. Calentar una olla con buen fondo y tapa. Con aceite agregar un diente de ajo para perfumar, colocar las albóndigas y dorarlas, hacerlo por partes y no mover mucho. Luego reservar.
  4. Preparar la salsa. En la misma olla, aplastar el diente de ajo, mientras sofreír la otra cebolla picada, luego agregar el tomate (yo lo mixeo) más el verdeo y los condimentos que guste.
  5. Sumar después las albóndigas y la copa de vino. Dejar hervir unos 20’. Agregar las hojas de albahaca fresca.
  6. Cuando estoy preparando la salsa, calentar una olla con aceite. Sofreír la cebolla picada y el ajo entero. Cuando transparenta agregar la taza de arroz, más la cucharita de sal. Agregar 2 tazas agua caliente y remover.
  7. En este caso además agregué 1 cuchara de verdeo picado más una lonja de cáscara de limón y ramita de romero. A los 15 ‘ volví a remover y agregué un poco de agua. Hasta que a los 20’, apagué. Casi risotto. Muy especiado.
